Spicy Creamy Tomato Pasta is a delightful combination of sweet, spicy, and creamy flavors. With the sweetness of jammy tomatoes, the kick of chili-infused olive oil, and the velvety richness of heavy cream, this dish is perfect for both casual weeknight dinners and elegant gatherings.


Ingredients

  • 2 cups cherry tomatoes (or other small tomatoes)
  • 3 tablespoons chili-infused olive oil (or regular olive oil with red pepper flakes)
  • 1 tablespoon balsamic vinegar
  • 1/2 cup heavy cream
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 8 oz pasta (spaghetti, penne, or your choice)
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish
  • 1/2 cup reserved pasta water

Instructions

Cook the Pasta:

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta until al dente according to package instructions.
  3. Reserve 1/2 cup of the pasta water and then drain the pasta.

Prepare the Sauce:

  1. Heat chili-infused olive oil in a large skillet over medium heat.
  2. Add garlic and red pepper flakes, sautéing until fragrant (1-2 minutes).
  3. Add cherry tomatoes and cook until softened, releasing their juices (5-7 minutes).
  4. Stir in balsamic vinegar and let it reduce slightly (1-2 minutes).

Add Cream and Parmesan:

  1. Reduce heat and stir in heavy cream, simmering gently for 2-3 minutes.
  2. Gradually add grated Parmesan, stirring until the sauce thickens.
  3. Season with salt and black pepper to taste.

Combine with Pasta:

  1. Toss the cooked pasta into the skillet with the sauce.
  2. Add reserved pasta water a little at a time to reach the desired consistency.
  3. Mix well to coat the pasta evenly.

Garnish and Serve:

  1. Plate the pasta and garnish with fresh basil leaves.
  2. Optionally, sprinkle additional Parmesan cheese and red pepper flakes for extra flavor.
  3. Serve immediately and enjoy!
