- 2 cups cherry tomatoes, halved
- 1 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp chili flakes (optional)
- 1 tsp maple syrup
- Salt and pepper, to taste
- Fresh parsley or basil, for garnish
- Grated Parmesan cheese or a vegan alternative (optional)
Instructions
- Cook the Pasta: Prepare the gluten-free spaghetti according to the package instructions. Drain and set aside.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and shallots. Cook for 2–3 minutes until fragrant.
- Cook the Tomatoes: Add the cherry tomatoes to the skillet. Stir occasionally and cook until they soften and begin to burst, about 5–7 minutes.
