For the casserole:

  • 4 cups fresh broccoli florets
  • 3 cups cooked chicken breast, shredded
  • 2 cups sliced mushrooms (optional)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk (whole or low-fat)
  • 1/2 cup sour cream
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon Worcestershire sauce
  • 1 cup grated cheddar cheese (vintage preferred)
  • Salt and pepper to taste

For the topping:

  • 1/2 cup grated cheddar cheese
  • 1/2 cup multigrain breadcrumbs
  • 1 tablespoon melted butter
  • Optional: A pinch of smoked paprika or cooked bacon bits

Instructions

  1. Prepare the Broccoli
Steam the broccoli florets until tender, then refresh them in cold water to maintain their vibrant green color. Set aside.
  2. Cook the Sauce
    • Melt butter in a saucepan over medium heat.
    • Stir in the flour and cook for 1-2 minutes to form a roux.
    • Gradually whisk in milk, ensuring no lumps remain. Simmer until the sauce thickens.
    • Add sour cream, Dijon mustard, nutmeg, Worcestershire sauce, and 1 cup of cheddar cheese. Stir until smooth. Season with salt and pepper.
  3. Assemble the Casserole
    • Preheat the oven to 375°F (190°C).
    • In a greased baking dish, layer the broccoli, chicken, and mushrooms.
    • Pour the cheese sauce evenly over the top.
  4. Prepare the Topping
    • Combine breadcrumbs, melted butter, and 1/2 cup grated cheddar cheese.
    • Add smoked paprika or bacon bits, if desired, and sprinkle the mixture over the casserole.
  5. Bake
    • Bake in the preheated oven for 25-30 minutes, until the topping is golden brown and the casserole is bubbling.
  6. Rest and Serve
Allow the casserole to rest for 5-10 minutes before serving for better slicing and enhanced texture.
